Spinach Quiche

Ingredients:
  • 1 small onion, chopped
  • 2 cloves garlic chopped
  • 1/2 cup sliced mushrooms
  • 1 bag spinach
  • 4 eggs
  • 1 1/4 cups milk
  • 2 cups grated cheddar cheese
  • 1 tbsp olive oil
  • lemon pepper
  • salt
  • 1 pie crust
Directions:
Saute garlic, onions, & mushrooms in olive oil
Add spinach and cook through.
Drain any excess liquid.

Add a pinch of thyme and salt and cook uncovered until dry and thick. Cool.

Grate cheddar cheese.

Mix eggs, milk, 1/2 tsp salt, cheese. Add cooled spinach mixture.

Preheat crust 10 min at 350 degrees.

Pour in filling.

Bake at 350 degrees for 40-60 minutes until light brown and thick. (additional cook time may be necessary).
Serves 2 quiches (8 serv)
